Happy Easter everyone! We are going to be celebrating the Octave this week and today I made kolaches. This is my Grandma Margaret’s recipe. I haven’t quite perfected the uniformity like my mother but they sure taste good warm out of the oven. Below is our family recipe. Warning…it makes a lot. I have 42 from this batch.
Kolaches
Ingredients
-1 cup butter -1 cup hot mashed potatoes (can use instant)
-1 qt. milk, scaled -1 pkg. year, dissolved in 1/2 cup warm water
-2 cups sugar -1 tsp. salt
-1 tsp. baking soda -1 tsp. baking powder
-Around 6-7 cups flour, enough to make a stiff batter
-Fruit Filling of Choice, I used 2 cans of cherries
Melt butter in potatoes; add scalded milk while hot. Set aside to cool–add other ingredients to make a rather stiff dough. Let set for 20 minutes; add more flour to make dough stiff enough to knead. Knead for 8-10 minutes. Let rise in warm place until doubled. Punch down. Let rest 10 minutes. Form into small balls (slightly flattened) and place on a greased cookie sheet. Let raise until double. Make a small indentation with fingers in the center of bun. Fill with fruit filling and bake 10 minutes at 400 degrees.
